We Had to Pivot

It has been a minute, but we are still here

It has been a long time since I have made a post here and there are several factors. There were impulsive decisions causing financial struggle and also inner turmoil of putting everyone ahead of myself and my dream of this business. These battles that I faced caused me to make a tough choice of either hang my hat up or pivot and keep my stubborn head down grinding to make this work.

I was knee-deep in the trailer build. The structure was coming together, the layout was dialed in, and the only thing left on the checklist were the appliances. Then I financed the motorcycle...an honest, heat-of-the-moment decision that felt right at the time but tightened the financial screws more than I expected. The money that was supposed to finish the trailer evaporated into monthly payments.

So I had a half-built trailer staring at me like an unfinished sentence.

That’s when I started looking at the market with clearer eyes. Almost every bakery that I know or had hear of was pushing the same sugar-heavy, nutrient-light desserts. Nobody was offering options for people trying to manage diabetes, avoid gluten, or fuel their training without choking down something dry and joyless. The gap was obvious like a giant neon sign saying open. And instead of pretending I didn’t see it, I stepped straight into it.

No one asked me to. No one needed to.

Sometimes opportunity doesn’t knock, it just sits there quietly, waiting for someone stubborn enough to pick it up.

So I pivoted. The trailer was on pause and built Buff Bros Bakery as a way to keep the mission alive and strong. Those protein-packed, health-conscious desserts weren’t a backup plan; they were a strategic flank maneuver. A way to build capital, build reputation, and keep moving forward while the trailer waits for its chance to roll out fully funded and fully prepared.

The trailer will come. But for now, the bakery is the proving ground—and it’s working.

First, I'd like to introduce myself, I am Ryan Weishaar and I am 27 years old with a pretty diverse background. I grew up with both an agricultural and military lifestyle. I have lived in several different locations throughout the years, including: Oklahoma, Manhattan, Georgia, and several other states as I was a field mechanic for a few years after I graduated with my associates in diesel technology from NCK College. I attended K-State and lived in Manhattan for roughly six years until I got a job as a design engineer. My goal of Buff Bros. Breakfast is to provide the best mobile breakfast experience you can have while in the Little Apple and I will try to post here every week to keep you up-to-date on the journey of what started as an idea and is transforming into so much more.

           When & Where?

To answer that question, we must go back about a month and a half ago to when I went out on the weekend, as I typically used to do. I had went to my normal bar, Dirty Dawgs Saloon, since I enjoy country two-step and line dancing. After getting a good amount of dancing in, I decided it was time to head home, but I wanted to grab some food, as most everyone does after spending their nights out dancing, bar hopping, partying, etc. However, I was facing a problem and it was, I wasn't feeling any of the options that are in Aggieville, so I began to drive around town. After zig zagging all around town, I realized there was nothing left open that I was craving. Feeling somewhat defeated and drowsy, I decided to just go home and go to bed; whilst driving home, an idea popped into my head; to open a food truck that serves breakfast food and caters to the late-night bar goers, party all-nighters, the night owls, but that has a twist... I wanted the truck to still have the greasy and salty or decadently sweet options, that we all want when those light night cravings hit or when we have had a few too many, but, the twist, I also wanted to offer healthy options for those people that may want or need them.

           The Foundation

To begin building the foundation for the business, I had several tasks that would become the stepping stones to start the journey of building and establishing a food truck business. I took immediate action after having the idea by heading to Marketplace and looking for enclosed trailers or trailers, in general. After finding multiple that I had thought about inquiring about two final contenders emerged; the one that won me over was an older 2 horse trailer that had multiple benefits to it, but would still require a decent amount of work to make it into the vision that I saw when I had the idea for starting the truck. After acquiring the trailer became the more tedious work of all the paperwork that is associated with starting a business. Seeing as this is my first time starting and running a business it has been very much a learning curve in itself. I could have went about filing the paperwork in a more efficient way that would have streamlined the process of getting things going. However, most of it only took me an afternoon to get everything filed. With all that started I focused on designing and launching the website, getting stickers or other forms of merchandise and business cards.
